There are bad salads. There are good salads. And then there are really good salads. This is one of them.
RECIPE:
-8 CARROTS ROASTED W/OLIVE OIL & SALT AND PEPPER AT 400 DEGREES FOR 30-40 MINUTES
-4 CUPS ARUGULA
-FETA CHEESE
-SLIVERED ALMONDS
SALAD DRESSING
2 TBS OLIVE OIL
JUICE OF HALF A LEMON
SALT AND PEPPER
OPTIONAL: 1 SMALL CLOVE MINCED GARLIC and A BLOOP OF HONEY
Think peppery from the arugula, sweet from the carrots, salty from the feta, crunchy from the almonds, and citrusy from the lemons. The flavors really do meld into the perfect bite.
This is great for parties! Add the dressing to the salad about 30 minutes before serving to let it all mix together. YUM!
