Dear Bar George,
You are beautiful, strong, and regal….just the right mix. You cook potatoes in duck fat. I love that. You serve drinks in little glasses and sometimes I think, “That’s not enough drink”, but then you always surprise me with how satisfied I am. You serve a mean brunch. Like the type of brunch you can’t just show up and expect to get into. Reservations required. Your bones are good. The kind of good I would love to live in. I really like your bar bites. And there’s a cozy corner there where you can sit back and relax and all of a sudden you’re sitting in a lounge somewhere in Europe daydreaming about Highland Cows. Please don’t change. A single tear would fall down my cheek in sheer sadness because Montreal would not be the same without you.
